Chef Cagnoli carries on the tradition of generous family cooking started by his grandmother, Adrienne. Bursting with the flavor of fresh seasonal ingredients, the cuisine at L'Escalinade pays homage to the city's heritage.
The selection of dishes presented here is representative of this home style menu: zucchini flower beignets, porchetta, stuffed veal breast, pepper and chick pea salad, stuffed vegetables and spinach gnocchi.

La porchetta is a favorite country-style prepared meat often included when workers gather for a merenda or casse croûte (literally to “break bread”, it refers to a small in-between meal snack) and at festivals whenever the locals gather to celebrate.

L'Escalinade, (which means small staircase in the Nice dialect) has been serving customers in the ancient section of Nice for over fifty years. This rustic bistro, situated between the Place Garibaldi and Place Saint François, specializes in authentic cuisine of the Comté de Nice region.
